GOLDEN MASHED POTATOES WITH CARAMELIZED ONIONS

1/4 cup unsalted butter
1 large yellow onion, coarsely chopped
1 tsp. kosher salt
2 1/2 lbs. Yukon Gold Potatoes, unpeeled, quartered
1 tsp. kosher salt
1 1/4 cups buttermilk
Kosher salt to taste
In a large skillet, melt butter over medium heat; add onions, stirring frequently, until onions are caramelized (25-30 min.). Season with salt. In a large saucepan, cover potatoes with water; bring to a boil over high heat. Add salt; reduce heat. Simmer, covered, until tender (15-20 min.); drain. Return potatoes to pan; mash potatoes with hand potato masher, adding buttermilk as needed. Stir in caramelized onions; season with salt. Serve immediately. Serves:
