1 lb bulk sausage
1/4 lb chopped fresh mushrooms
1 chopped medium onion
8-10 eggs
4 tbsp sour cream
Salt and pepper
8 tbsp salsa
2 cups each grated cheddar cheese, Monterey Jack cheese and Velvetta Mexican cheese loaf

Saute first 3 ingredients in a large skillet until done. Drain and set aside.

Combine eggs and sour cream with salt and pepper. Whip egg mixture 1 minute in blender and pour into a greast 13x9 inch baking dish. Bake at at 400 until eggs are softly set, about 5-8 minutes. Spoon salsa over top of eggs and spread sausage mixture over top. Sprinkle with combined cheese and refrigerate for 30 minutes before serving. Then bake at 325 for 30 minutes.

Serves 6-8
