IMPOSSIBLE CHEESEBURGER PIE

1 lb lean ground beef
1 onion, chopped
2 cloves garlic, chopped
1 cup chopped mushrooms
1/4 tsp salt
1/8 tsp pepper
11/2 cups milk
3 eggs
¾ cup baking mix
4 slices American cheese
2 tomatoes, sliced

Preheat oven to 400. Grease a 10 inch pie plate and set aside. In heavy skillet, cook ground beef with onions, garlic, and mushrooms, until beef is browned. Drain well, add salt and pepper, and pour into prepared pie plate.

In medium bowl, combine milk, eggs, and baking mix and beat until smooth. Pour over mixture in pie plate. Bake for 25 minutes, top with cheese slices. Return to oven and bake 5 minutes longer until cheese is melted and pie is set. Top with tomato slices and serve. Serves 6
