3 eggs, whipped lightly
Chopped tomatoes, ham, onion and bell peppers
In a skillet, saute ham and chopped vegetables in oil. Add eggs and stir until done. Serve on top of home fries or hash browns. Top with grated cheese. Melt cheese in oven or microwave and serve. Serves 1
