TWO-CHEESE SAUSAGE STRATA

1 lb. hot or mild pork sausage
1 lb. day-old bread, cut into 3/4-inch pieces
1 cup shredded cheddar cheese and Swiss cheese
10 eggs
3 cups half-and-half
1 cup chopped green onions
1 tsp dry mustard and salt
Spray 13x9 inch pan with nonstick cooking spray. Cook sausage in large skillet over medium-high heat until no longer pink, stirring frequently.
Place bread in pan; top with cheddar cheese, Swiss cheese and sausage. Beat eggs in large bowl. Add half-and-half, green onions, mustard and salt; beat until well blended. Pour over mixture in pan. Cover with foil.
Refrigerate at least 8 hours or overnight. When ready to bake, heat oven to 350. Bake uncovered 50 to 60 minutes or until knife inserted in center comes out almost clean and top is light brown. Let stand 10 minutes before serving. Serves 6
