SMOKED SAUSAGE BENEDICT

French bread slices, toasted
Smoked sausage
Whole eggs
Hollandaise sauce

Poach egg in boiling water. Meanwhile, heat sausage until hot. Cut in half lengthwise and place on toasted French bread slice. Top with poached egg, and then ladle hollandaise sauce over top. Serve immediately.
