SAUSAGE BREAKFAST CASSEROLE

2 lb breakfast sausage links
1 lb yellow onions, chopped
2 lb red or Yukon gold potatoes
10 oz sharp cheddar cheese, shredded
1 pkg sausage gravy mix, made according to package directions

Remove skins from sausage and break into 1 inch lengths, put in a 10x8 inch baking dish and bake at 375 for 20 minutes. Remove from oven and drain off all the fat. Fry onion in a little olive oil until brown and caramelized. Wash potatoes, put in a pan and cover with water, add 1 tsp salt. Bring to a boil and cook for about 10 minutes. Remove from heat and drain; cover with cold water.

To sausage, add a layer of onion over the sausage and then a layer of grated cheese on that, then slice the potatoes and layer over the cheese. Pour gravy over everything, using a knife to make tunnels for it to go through the bottom of the dish. Finely cover the potatoes with the cheese. Cover the dish and at this stage you can put it in the refrigerator overnight.

Next morning, preheat the oven to 375 and cook the casserole for 45 minutes. Remove the cover and raise the temperature to 425 and cook an additional 15 minutes. Note: if you cook the casserole straight after preparation reduce the cooking time at 375 by about 15 minutes.
