POTATO RANCHERO

1 (32 oz) pkg frozen shredded hash browns, thawed
1/4 cup oil
1 cup green chili sauce
1/2 cup ranch dressing mixed with 2 tbsp salsa
8 oz sausage, cook and drained
4 eggs, beaten
1/2 cup milk
1/4 cup dry onions
Seasoned salt
2 tbsp dried parsley
1 1/2 cups grated cheddar cheese

Spray a 13x9 inch baking dish with cooking spray.

Preheat oven to 350. Place thawed hash browns in a pan (dry excess moisture with paper towels if necessary), stir in oil, coating hash browns as mush as possible, and bake 45 minutes. Remove potatoes from oven, pour green chili sauce and ranch dressing over top, mixing slightly. Sprinkle crumbled sausage on top.

In a separate bowl, blend remaining ingredients except cheese and pour over potato mixture. Top with grated cheese and bake 45 minutes more. Let stand 5 minutes before serving.
