POTATO BRUNCH CASSEROLE

5 cups sliced (1/4 inch thick) unpeeled white potatoes
3 tbsp butter
2 cups finely chopped onions
2 tsp garlic salt
1/2 tsp pepper, dried chopped thyme, rosemary and sage
2 tbsp dried parsley flakes
1 1/2 pkg (18 oz) roll sausage
2 cups shredded Swiss cheese

Preheat oven to 350. In a saucepan, boil potatoes in salted water until tender. Drain. In a large skillet, melt butter; add potatoes and onion. Cook over medium heat until potatoes are lightly browned. Add spices. Lightly toss to coat with seasonings. Spoon potato mixture into an ungreased 13x9 inch baking dish.

Using same skillet, cook sausage until lightly browned, stirring frequently to crumble; drain. Spoon cooked sausage over potato mixture. Top with cheese and bake, uncovered, for 25-30 minutes or until heated through. Cut into squares and serve with eggs. Serves 8-10
