HAM AND EGG BREAKFAST BAKE

12 eggs
1/2 cup milk and sour cream
1/2 tsp salt
1-1/2 cups finely chopped leftover ham
3/4 cup chopped red bell pepper
1/2 cup sliced mushrooms and green onion
1 cup shredded Cheddar cheese

Preheat oven to 325. Spray 13x9 inch baking dish with cooking spray. Beat eggs, milk, sour cream and salt in medium bowl with wire whisk until well blended.

Add ham, bell peppers, mushrooms and onions; mix well. Pour into prepared baking dish. Bake 50 minutes, or until knife inserted in center comes out clean. Sprinkle with cheese. Bake an additional 3 minutes, or until cheese is melted. Serves 8
