FANCY EGG SCRAMBLE

1 cup diced bacon, cooked with 1/4 cup chopped green onion and 2 tbsp butter
12 beaten eggs
1 (3 oz) can mushroom stems and pieces, drained
1 cheese sauce recipe follows
4 tsp butter, melted
2 1/4 cups soft bread crumbs
1/8 tsp paprika

In a large skillet, cook the bacon with the onion in the butter, stirring to it doesn’t turn brown. Add eggs and scramble just until set. Fold mushrooms and cooked eggs into cheese sauce. Turn into a baking dish. Combine remaining butter, crumbs and paprika; sprinkle on top of eggs. Cover and chill until 30 minutes before serving. Bake, uncovered, at 350 for 30 minutes.

Cheese sauce: Melt 2 tbsp butter. Blend in 2 tbsp flour, 1/2 tsp salt and 1/8 tsp pepper. Add 2 cps milk. Cook and stir until bubbly. Stir in 1 cup shredded cheese until melted.
