COUNTRY BREAKFAST

1/2 lb pork sausage, removed from casings
1 tbsp unsalted butter, more as needed
1 cup chopped yellow onion
1/2 cup chopped green or red bell peppers
1 1/2 tsp Cajun seasoning
1/2 tsp hot sauce and salt
1/4 tsp pepper
2 tsp minced garlic
1 large potato, peeled and cubed
1/4 cup chopped fresh parsley
1 cup chicken stock
4 large eggs
1 cup shredded sharp cheddar cheese
Hot toast, accompaniment

Brown sausage. Add butter and when melted add onions and next 6 ingredients, stirring, until soft, about 4 minutes. Add the garlic and cook for 30 more seconds. Add the potatoes (and additional butter, if needed) and cook, stirring, until lightly browned, about 4 minutes. Add parsley and stock, stir well, and bring to a boil. Reduce heat to low and simmer until the potatoes are soft and stock is absorbed, about 10 minutes.

With a spoon, make 4 indentations in the mixture, and break an egg into each. Cover and cook until the eggs are set, about 4 minutes. Sprinkle the eggs with Cajun seasoning and cheese. Serve immediately with toast.
