BLITZ CASSEROLE

Batter
1/2 lb butter, melted
1/2 cup sugar
2 eggs
1 cup flour
1/8 tsp salt
1/4 cup milk
1 tsp vanilla extract

Filling
2 lbs ricotta cheese
2 eggs
1/4 cup sugar
1/8 tsp salt
1 lemon, juiced (1/4 cup)
1 (8 oz) pkg cream cheese, softened

Mix batter ingredients by hand and pour 1/2 batter into 2 greased 9 inch pie pans. Place fillings ingredients in blender and blend well. Pour filling over batter, spreading, not mixing, over the batter. Spread remaining batter over the filling. Bake at 300 for 1 1/2 hours. Let set for a few minutes and then cut into wedges to serve.
