BAKED FLORENTINE OMLET

8 large eggs, beaten
1 cup ricotta cheese
1/2 cup milk
1/2 cup thinly sliced scallions
1/2 tsp dried basil
1/4 tsp dried oregano and pepper
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 cup coarsely chopped plum tomatoes, seeded
1/4 tsp salt
1 cup mozzarella cheese, grated

Preheat oven to 325. Combine eggs and ricotta cheese; beat until just combined. Stir in milk and seasonings. Fold in vegetables. Spread evenly into a greased 3 quart rectangular baking dish. Top with cheese. Bake 30-35 minutes. Let stand 10 minutes before serving. Serves 6
