BAKED CANADIAN BACON

2 lb Canadian bacon in a chunk or roll
1/2 cup beer, plus a little extra
3/4 cup sugar
1/2 tsp dry mustard powder

Preheat oven to 350. Place bacon, fat side up, on rack in roasting pan. Pour beer over bacon and roast 15 minutes. Combine sugar, dry mustard and additional beer to make a smooth paste. Spread glaze over bacon and bake 1 hour, basting. Slice in thin slices to serve. Serves 4-5
