BACON AND POTATO FRITTATA

4 slices bacon, cut into strips
2 large potatoes, peeled and cut into slices (about 3 cups)
1 small onion, minced
1/4 cup chopped bell pepper
1/4 tsp pepper
1/2 tsp salt
6 large eggs
1 cup shredded Swiss cheese
1 cup milk
1/2 tsp salt
1/3 cup baking mix
2 tbsp butter, melted

Preheat oven to 375. Grease a 10 inch quiche dish. Cook bacon until brown and drain. Discard all but 1 tbsp grease from pan. Add next 5 ingredients. Cook over medium heat for 15 minutes or until potatoes are fork-tender. Remove from heat and add bacon. In a medium bowl, mix together remaining ingredients and pour into quiche dish. Spoon potato mixture evenly on top. Bake 20-30 minutes.
