SCOTCH SHORTBREAD

1 cup butter, softened
3/4 cup granulated sugar
1 teaspoon vanilla
2 1/2 cups flour

Cream the butter, sugar and vanilla together. Stir in flour, mix with hands. Chill dough. Roll out to 1/3 to 1/2 inch thickness. Cut into fancy shapes no bigger than 1 inch (we used 1-inch snowflake and Christmas tree cutters). Place on ungreased baking sheet. Bake in 300-degree oven for 20 to 25 minutes.

Note: Our cookies baked in about 15 minutes.

Yields about 2 dozen. Can freeze
