PEPPERMINT BROWNIE CRISPS

1 (18.3 oz.) pkg. fudge brownie mix
1/2 cup flour
1/4 cup vegetable oil
3 tbsp. water
2 eggs
15 starlight mints, coarsely crushed, divided

In large mixing bowl, combine first 5 ingredients, mixing by hand. Scoop tbsp. of batter onto greased cookie sheet, swirling to create a circle; repeat with 5 additional tbsp. of batter.

Bake at 350 until edges are set and centers are firm (9-10 min.); remove from oven and sprinkle tops with crushed mints. Cool on cookie sheet 5 min.; remove to wire rack to completely cool. Repeat with remaining batter.

Good To Know: To keep cookies crisp, store in an airtight container with parchment paper between layers.
For gift giving, stack 6 cookies in clear plastic bag with squares of parchment between each cookie; tie with a colorful ribbon.
