ROASTED CHEDDAR NEW POTATOES

42 lbs. new potatoes (about 16-20), small red or golden
1 tbsp. butter
1 tbsp. olive oil
2 tbsp. chopped fresh rosemary, divided
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
6 tbsp green onions, finely chopped
6 slices bacon, cooked crisp and crumbled
1 tbsp spicy brown mustard
1 tsp horseradish
1 1/2 cups diced cheddar cheese
Sour cream or mayonnaise

Wash potatoes; pat dry. Cut in halves or quarters depending on size; set aside. In 13x9 inch glass baking dish in preheated 350 degree oven, melt butter and oil (about 3 min.). Remove from oven; add potatoes, 1 tbsp. rosemary, salt and pepper. Stir to combine ingredients and coat potatoes evenly. Bake until well-browned and tender when pierced with a fork (30-40 min.), stirring every 15 minutes.

Remove from oven; combine remaining 1 tbsp. rosemary with remaining ingredients and stir in enough sour cream or mayonnaise to combine. Scatter mixture over top; return to oven until cheese melts, about 3-5 minutes.
