PESTO CHEESE STARS

1/2 cup (1 stick) unsalted butter , softened
1/4 cup pesto
2 cups (8 ounces) shredded white cheddar cheese
1/2 cup (1.5 ounces) shredded parmesan cheese
1 1/4 cups all-purpose flour , plus extra for surfaces
1 large egg white , lightly beaten
3 tablespoons finely chopped pistachios
Beat butter and pesto in large mixer bowl until light and creamy. Stir in cheddar cheese and Parmesan cheese. Gradually add 1 1/4 cups flour; stir until combined. Turn dough onto lightly floured work surface and knead 4 times. Divide dough equally into 4 balls. Wrap in plastic wrap; refrigerate for 30 minutes.
Preheat oven to 375 F. Line baking sheets with foil.
Roll 1 dough ball into 1/8-inch-thick rectangle on lightly floured surface. Cut dough with 2-inch star-shapedcookie cutter; place 1-inch apart on prepared baking sheets. Repeat with remaining dough balls. Brush tops of stars with egg white; sprinkle with nuts. Bake for 8 to 10 minutes or until edges are lightly browned. Cool on baking sheets for 5 minutes. Remove to wire racks to cool completely.
