FRUIT FILLED PHYLLO SHELLS

Category: Layered Desserts

4 sheets phyllo dough, thawed
4 Tbsp. butter, melted
3 Tbsp. sugar
Fresh fruit (strawberries, blueberries, raspberries, kiwi, blackberries)
1 small pkg French vanilla instant pudding
1 1/2 cups milk
1/2 cup vanilla flavored yogurt
1/2 cup chocolate chips, melted
Confectioners sugar

Crust: Preheat oven to 350 degrees. Brush 12 (3inch) muffin-pan c. lightly with butter. Unfold dough. Remove 1 sheet leaving remaining dough covered with plastic wrap as you work. Using a pastry brush, brush 1 sheet lightly with butter & sprinkle with 2 tsp. sugar. Repeat procedure using remaining sheets, butter & sugar.

Cut into 12 (4 inch) squares. Gently press squares into muffin cup. Brush edges with remaining butter. Bake 10 minutes or possibly till golden brown. Remove shells from pan as soon as you take them out of the oven or possibly they will stick & break into pieces once cooled. Cold on a wire rack.

Filling: Mix pudding mix with milk and yogurt. Let set. Spoon a small amount of mixture into bottom of phyllo cups.

Place desired pieces of fruit on top of pudding mixture. Drizzle with melted chocolate and sprinkle with confectioners sugar.
