PEANUT BUTTER CHEESECAKE CUPS

1 1/2 oz cream cheese, softened
3 tblsp creamy peanut butter
1/4 cup powdered sugar
Melted Chocolate
1 bag semi sweet chocolate chips
1/4 cup creamy peanut butter
Line a 24 piece mini muffin tin with cupcake liners. I prefer the foil ones since they hold up better.
In a small bowl whip together the cream cheese, peanut butter, and powdered sugar. Set aside.
In a microwave safe bowl melt the chocolate chips at 30 second intervals, stirring each time, until melted. Stir in the peanut butter.
Drop a teaspoonful of chocolate into each liner. Tap gently to smooth and stick in the fridge for a minute until the chocolate slightly hardens.
Drop a 1/2 tsp of the cheesecake filling into each tin. Press slightly to flatten.
Fill each cup with another spoonful of the melted chocolate mixture until the filling is completely covered.
Store in the refrigerator until firm then transfer to a plastic container until ready to deliver or eat yourself. Makes 24 mini cups.
