MUSHROOM SAUCE

MUSHROOM SAUCE
1 tbsp oil and butter
1 cup sliced mushrooms
1 cup chopped onions
1/2 tsp salt, pepper and garlic powder
1 tbsp brandy, Madeira and sherry

Combine oil and butter in a saucepan. Add mushrooms and onions and saute about 2 minutes. Add seasonings, then wine. Simmer about 1 minute. Good served over baked chicken or pork chops.

Variation:
1 tsp flour
1/4 cup butter
1 tbsp Dijon mustard
1 tbsp chopped chives
Salt

Saute mushrooms and onions as directed above. Add brandy and wines, stir to heat and ignite. Stir until flames die down. Sprinkle flour over all and stir in 1/4 cup butter and then mustard. Stir until thickened slightly. Keep warm over low heat. Good served over grilled beef, chicken or pork.
