HERB GRAVY FOR TURKEY

Neck and giblets from a 14 lb turkey
1 onion and celery, chopped
1/4 cup soy sauce
1 tsp dried oregano and rosemary
1/4 cup cornstarch
1/2 cup water

Bring first 3 ingredients and water to cover to a boil in a medium saucepan; reduce heat, cover, and simmer 45 minutes or until neck and giblets are tender. Drain, reserving broth.

Pour turkey dripping from roasting pan into a large measuring cup; skim off fat. Add reserved broth, soy sauce, spices and enough water to make 3 cups liquid. Return mixture to roasting pan, stirring to loosen particles.

Whisk together cornstarch and 1/2 cup water. Pour in broth mixture, and cook, stirring constantly, until thickened. Serve with turkey.
