CARAMEL APPLE SHEET CAKE

No-Stick Cooking Spray
2 large eggs
1 cup vegetable oil
1 3/4 cups sugar
2 1/2 cups self-rising flour
3 cups peeled, chopped apples
1 cup chopped pecans
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Caramel Frosting

Heat oven to 300F. Spray a 13 x 9-inch baking pan with no-stick cooking spray.

Beat eggs in large bowl. Add oil and sugar. Stir until well blended. Stir in flour, apples, pecans, cinnamon and vanilla until thoroughly blended. Pour batter into prepared pan. Bake 1 hour 10 minutes or until cake begins to pull away from sides of pan. Cool. Spread top with Caramel Frosting.
