GRILLED GARLIC HERB AND WINE SAUCE

1 head garlic, unpeeled, separated into cloves
1 tsp olive oil
1 1/4 cups dry red wine
1/2 tsp instant beef bouillon
1/4 tsp pepper, basil and oregano
4 tbsp butter

Place garlic in center of an 8 inch foil square. Drizzle with oil. Bring up 2 opposite edges of foil, leaving a little space for expansion of steam. Tightly seal each end. Grill 20-25 minutes or until garlic is very soft, turning packets occasionally.

Meanwhile, in a saucepan, combine wine, spices and bouillon. Bring to a boil and reduce heat and simmer 10-15 minutes or until mixture is reduced about 3/4 cup. Remove from heat; set aside. Allow garlic to cool about 5 minutes. Remove garlic cloves from packet and squeeze the garlic from skins; discarding skins. Press peeled garlic through a sieve into the cooked wine mixture; mix well. Stir in butter until blended. Serve warm over steak. Makes 1 cups sauce.
