ENCHILADA SAUCE

30 oz of tomato sauce
3/4 cup water
2-3 tbsp chili powder
1 tsp dried oregano
1/2 -1 tsp ground cumin, or more to taste
1 clove garlic, minced

Bring to a boil, reduce heat, simmer uncovered, stirring occasionally, for about 10 minutes. Adjust the seasonings to taste.
