CREOLE TARTAR SAUCE

1 egg
1 tbsp minced garlic
2 tbsp lemon juice and chopped green onion
1 tbsp chopped parsley
1 cup olive oil
1/4 tsp cayenne
1 tbsp Creole or whole-grain mustard
1 tsp salt

Combine first 5 ingredients in a food processor and puree for 15 seconds. With the processor running, pour the oil through the feed tube in a steady stream. Add remaining ingredients and pulse one or twice to blend. Cover and let sit for one hour in the refrigerator before using. Best if made 24 hour ahead. Makes 1 1/3 cups.
