3 cups dry pinto beans
1 clove garlic, minced
1 tsp salt and chili powder
2 small onions
1/2 cup packed brown sugar
3/4 cup canned tomato
3 slices bacon, sauteed but not crisp – just enough to render the fat
Cover beans with water and soak overnight. Pour out the water and add more to the beans. Bring to a boil, adding garlic and salt. Simmer 1 hour. Drain beans, saving the liquid. Put beans and whole onions into casserole. Sprinkle beans with sugar and chili powder. Cover with strained tomato and 1 cup reserved bean liquid. Arrange bacon on top. Cover and bake at 300 for 5 hours. Adding additional bean liquid if necessary. Serves 8-10
