GOAT CHEESE AND SUN-DRIED TOMATO SPREAD

8 oz goat cheese, room temperature
2 tbsp pine nuts
4 tbsp sun-dried tomatoes packed in oil and herbs, coarsely chopped
2 tbsp fresh basil, finely chopped
Salt and fresh pepper
Preheat oven to 400. In a small skillet over low heat, toast pine nuts until lightly browned, about 3-5 minutes. Do not overcook - the pine nuts will continue to cook when you take them off the heat, so be careful.
In a medium bowl, combine goat cheese, pine nuts, tomatoes, basil, salt and pepper. Stir until well blended. Transfer mixture to a small ramekin. Bake for 5 minutes, until cheese is bubbling. Serve either warm or at room temperature with crackers. Makes about 1 cup of spread.
