MAMA'S MEATBALLS

FOR THE STOCK MIXTURE:
1/2 cup chicken stock
1/2 large sweet onion
4 cloves garlic
1/2 bunch fresh parsley, chopped
FOR THE MEATBALLS:
1/2 cup ground beef
1/2 cup ground pork
1/2 cup ground veal
1/2 cup breadcrumbs
5 eggs
1/2 cup grated Parmigiano Reggiano cheese
2 to 3 pinches chili flakes
2 to 3 pinches salt
Extra virgin olive oil (for frying)
Tomato sauce
Hot cooked spaghetti (optional, for serving)

Place chicken stock, onion, garlic and parsley in blender or food processor and puree.

Place ground meats, breadcrumbs, eggs, cheese, chili flakes and salt in a large mixing bowl. Add stock mixture and mix with both hands until mixture is uniform. Do not over mix. With a little olive oil on hands, form 2 oz balls.

Heat extra virgin olive oil over medium-high heat in a large skillet (about 1/2 inch deep). Brown meatballs, turning once.

Then simmer in tomato sauce and place over spaghetti if desired.

Makes 20 meatballs
