GRILLED POTATO DISKS

1 lb. potatoes, peeled and julienne
1 Tbs. balsamic vinegar
3 Tbs. chopped fresh chives
1/2 tsp. salt
Freshly ground black pepper
3 Tbs. melted butter

Place potatoes on paper towels to remove moisture. Sprinkle with balsamic vinegar. Combine chives, salt, pepper, and butter; add to potatoes and toss to coat. Coat a baking sheet with butter. On baking sheet spoon julienne potatoes into 12 equal portions. Flatten to form thin disks. Place baking sheet in center of cooking grate. Grill potatoes 12 minutes or until crisp, turning once halfway through grilling time. Serves 6
