NEW POTATOES WITH FRESH LEMON HERB-BUTTER - Crockpot

3 to 3 1/3 pounds small new potatoes
1/2 cup water
1/2 cup (1 stick) unsalted butter
1/2 cup chopped fresh Italian parsley
3 tablespoons freshly squeezed lemon juice
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh dill
Salt and freshly ground black pepper to taste

Place potatoes and water in a large round or oval slow cooker. Cover and cook on high until tender when pierced with a sharp knife, 3 to 31/2 hours.

In a small saucepan on the stovetop or in a small bowl in the microwave, heat the butter with parsley, lemon juice, chives and dill; you are not cooking this, just melting the butter and warming the herbs. Pour the butter mixture over the hot potatoes in the slow cooker; toss to coat evenly. Season with salt and pepper. Serve immediately. Serves 10 to 12.
