BASIC SHERRY VINAIGRETTE

Category: Salad Dressing

1/3 cup extra virgin olive oil
2 tablespoons sherry vinegar
1-2 teaspoons maple syrup
Salt and freshly ground black pepper
Glass jar with tightly fitting lid

Combine all ingredients in a glass jar with a tightly fitted lid. Close jar and shake vigorously until ingredients emulsify.

When dressing salad, start with less than you think you need, and rather than pouring it over the leaves, pour it so it coats the back of the bowl (shake up the jar a bit right before you pour). Then, using your hands (wash and dry them first), gently toss to coat. You want the lettuce and garnishes to be coated with dressing but not overwhelmed by it. Dress salad just before serving. Store extra dressing in the refrigerator. Makes approximately 1/2 cup dressing.
