CREAMY BAKED MASHED POTATOES - Easy

1 envelope dried vegetable soup mix
4 cups hot mashed potatoes
1 cup shredded cheddar or swiss chese
1/2 cup chopped green onion
1 egg, slightly beaten
1/8 tsp pepper
1/4 cup shredded cheese, for topping

Preheat oven to 375. Lightly butter a casserole dish. Combine ingredients except the cheese topping. Bake for 40 minutes and top with remaining cheese. Bake an additional 5 minutes or until cheese melts.
