Shelly's Recipe

SPECIAL BAKED POTATOES

4 medium baking potatoes
2 tbsp butter, melted
2 tsp Italian seasoning
1 tsp salt
Pepper and garlic powder, to taste
1/4 cup finely shredded cheese, any flavor
2 tbsp grated parmesan cheese
2 tbsp chopped fresh parsley or 2 tsp dried parsley flakes

With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Fan potatoes slightly. Place in an ungreased 13x9 inch baking pan. Drizzle with butter and sprinkle with seasonings. Bake, uncovered, at 425 for 50 minutes. Sprinkle with cheese and parsley and bake 10-15 minutes longer or until lightly browned. Serves 4
