ASIAN CRISPY NOODLE SALAD

1/2 medium Chinese cabbage, shredded finely
1 small can water chestnuts, sliced thinly
6 oz. snow peas, sliced thinly
1/3 cup toasted unsalted cashews, chopped coarsely
1 large red bell pepper, sliced thinly
4 oz. packet fried noodles
1 cup loosely packed fresh cilantro leaves

Sesame Soy Dressing (you may make a larger amount and keep in refrigerator for other salad recipes)
1 teaspoon sesame oil
1/4 cup soy sauce
1 tablespoon sweet chili sauce
2 tablespoons fresh lime juice

Place ingredients for sesame dressing in screw-top jar; shake well. Combine cabbage, water chestnuts, snow peas, pepper and fried noodles in a medium bowl. Divide salad amongst serving bowls; sprinkle with nuts, and cilantro, drizzle with dressing. Serves 4
