OVER-STUFFED PORK CHOP

4 center cut pork chops, 1-inch thick
1/2 finely chopped onion
1/3 finely chopped green bell pepper
1/3 finely chopped red bell pepper
2 Tbsp Worcestershire sauce
2 tsp salt
1 tsp ground white pepper
2 tsp paprika
1/2 lb. fresh ground pork
1/2 lb. fresh ground lean beef

Preheat oven to 375 degrees.

On a flat surface, using a sharp knife, make a slit lengthwise in each pork chop and set aside.

Puree onion, bell peppers and Worcestershire sauce in a food processor.

In a small bowl, combine salt, white pepper and paprika. Mix well and divide into two equal portions.

In a large bowl, combine half of seasonings, pureed mixture, pork and beef, and mix well. Divide the mixture into 4 equal amounts and over-stuff each pork chop. Place stuffed pork chops in a 12x9x2-inch baking dish. Sprinkle remaining seasoning on both sides of each pork chop. Bake for 40 minutes or until browned. Serves 4
