Shelly's Recipe

MEDITERRANEAN CHICKEN

4 boneless chicken breasts
3 oz. virgin olive oil
1 tsp oregano (dried) leaves
16 pitted kalamata olives
2 large ripe tomatoes - course diced
To taste salt
To taste black pepper - ground

Brush chicken with oil then season and grill it, heat remaining oil quite hot, add oregano followed immediately by tomatoes and olives, toss together until just warm, toss chicken breasts with mixture.
