SWEET POTATO CASSEROLE FROM THE DELTA

Potato Mixture
1 1/2 cup cooked mashed sweet potatoes
1 cup sugar
1 cup coconut
1/2 cup melted butter
2 beaten eggs
1 cup whole milk
1 teaspoon vanilla

Mix all ingredients and pour in 13”x9” greased baking dish.

Topping
1/2 cup self‐rising flour
1/2 cup sugar
1/4 cup melted butter
1 cup chopped pecans

Mix all ingredients. Use fingers to crumble topping evenly over potato mixture. Bake for 45 minutes at 350 degrees. (It is almost like a dessert.)
