ITALIAN SHRIMP AND PASTA TOSS

1 cup sliced mushrooms
1/2 cup chopped onion
2 cloves garlic, finely chopped
1 tsp basil leaves
Salt and pepper, to taste
2 tbsp olive or vegetable oil
1/2 cup water
2 tbsp lemon juice
2 tsp chicken-flavored bouillon
1 lb medium raw shrimp, peeled and deveined
1 cup chopped green or red bell pepper
1/2 (1 lb) pkg egg noodles, cooked al dente and drained
2 tbsp grated parmesan

In a large skillet, cook 6 ingredients in oil until tender. Add liquids and bring to a boil. Reduce heat; add shrimp and pepper. Simmer, uncovered, for 5-8 minutes or until shrimp are pink.

In a large bowl, toss shrimp mixture with hot noodles and cheese. Serve with additional cheese, if desired. Serves 4
