1 each small onion, red, yellow and green bell pepper, finely diced
1 clove garlic, minced
2 tbsp olive oil
1 tsp cumin
Salt and pepper, to taste
24 medium cooked shrimp, coarsely chopped
1 tbsp chopped fresh cilantro
12 flour tortillas
3 tbsp unsalted butter, melted
12 oz Monterey jack cheese

Saute vegetables and garlic in oil. Add spices, shrimp and cilantro. Brush 1 side of each of 6 tortillas with melted buttered. Arrange buttered side down on baking sheet.

Top with equal amounts of filling and cheese. Cover and remaining tortilla, lightly pressing down. Brush top with butter. Bake at 500 for about 5 minutes or until lightly browned. Cut into quarters. Serves 4-6
