1 (16 oz) package ground pork sausage
1 medium sweet onion, chopped
1 large red or yellow bell pepper, diced (or 1/2 of each color)
6 flour tortillas
9 large eggs
1 cup shredded Mexican 4 cheese blend
Salsa
Add sausage to a large frying pan and cook over medium heat. Break up the sausage as it cooks, adding the onion about half way through the cooking process. Stir often. When fully cooked, stir in the chopped bell pepper. In a separate pan, scramble the eggs, being careful not to overcook.
Heat the quesadilla maker and when ready, spray lightly with non-stick cooking spray. Place one tortilla on the grill plate, spread about one third of the meat mixture over the tortilla, then the equivalent of 3 scrambled eggs over the meat. Top with about one quarter cup (or more) of the cheese and place another tortilla shell on top. Close the quesadilla maker and allow to cook for a few minutes. I like the tortilla shells to become a golden brown and for the cheese to be completely melted. Remove the quesadilla to a cutting board and cut into quarters.
Each complete tortilla serves two (two quarter slices each), and this recipe will serve six. Serve quesadillas with salsa and home fried potatoes.
