BBQ CHICKEN KABOBS

2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
2 green bell peppers, seeded and cut into 1-inch chunks
2 red bell peppers, seeded and cut into 1-inch chunks
2 purple onions, peeled and cut into 1-inch chunks
1 16-oz can pineapple chunks, drained
Metal or bamboo skewers
1 cup Jack Daniels Original No. 7 BBQ Recipe Grilling Sauce
1/2 cup orange marmalade
1/2 teaspoon ground ginger

Note: if using bamboo skewers, soak them in water for about 30 minutes prior to threading kabob ingredients on to keep them from splitting or burning.

Alternately thread the chicken, green and red bell peppers, purple onions and pineapple chunks onto the skewers. Note: this may be done earlier in the day and stored, covered, in the refrigerator until ready to grill. When ready to grill, preheat the grill to medium heat or get the charcoals to medium heat.

Combine the BBQ grilling Sauce together with the orange marmalade and ground ginger. Brush the mixture over the kabobs. Place the kabobs on the pre-heated grill and cook for about 12 - 15 minutes, turning frequently and brushing with additional sauce. Remove from the grill and serve.
