HAM AND BROCCOLI AU GRATIN

1 medium onion, chopped
8 oz sliced mushrooms
1 tbsp butter, melted
1 can cheddar cheese soup, undiluted
1 cup shredded sharp cheddar cheese
1/2 tsp garlic powder
1 (10 oz) pkg frozen chopped broccoli, thawed and drained
3 cups cooked rice
2 cups diced cooked ham
1 (2 oz) jar diced pimiento, drained
1 small can French fried onion rings
Saute onions and mushrooms in butter in a Dutch oven until tender. Add next 3 ingredients and stir until cheese melts. Stir in the next 4 and spoon into a lightly greased casserole dish. Cover and chill overnight.
To bake, remove from refrigerator and let stand at room temperature. Preheat oven to 350. Bake, covered, for 40 minutes. Sprinkle onion rings on top and bake an additional 5-8 minutes. Serves 6-8.
