APPLE SPICE COFFEE CAKE

For the Cake•1/2 c. non-dairy milk
•3/4 c. unsweetened applesauce
•1/4 c. canola or coconut oil
•1 t. vanilla extract
•1/2 c. organic brown sugar
•1 c. whole wheat pastry flour
•1 c. oat flour (you can grind your own using old-fashioned oats)
•1 1/2 t. baking powder
•1/2 t. baking soda
•1 t. cinnamon
•1/2 t. nutmeg
•1/2 t. salt
•1 apple, peeled, cored and diced

For the Streusel Topping
•3 T. organic brown sugar
•1 T. organic sugar
•3 T. whole wheat pastry flour
•2 1/2 T. vegan margarine (i.e. Earth Balance)
•1/4 c. old-fashioned oats
•2 t. cinnamon


Preheat oven to 350 degrees. In a small mixing bowl or a liquid measuring cup, combine milk, applesauce, oil, vanilla and brown sugar.

In a large bowl, combine flours, baking powder, baking soda, cinnamon, nutmeg and salt. Add wet ingredients to dry and stir until just combined. Add your peeled, cored and diced apple to your batter and fold in gently. Transfer batter to an 8x8 pan that has been lightly greased or coated with cooking spray.

In a small bowl, mash together all of streusel topping ingredients until uniform in consistency. Sprinkle topping evenly over the top of the coffee cake. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
