MARINATED MUSHROOMS II

24 oz fresh button mushrooms
1/2 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1 pkg (.7 oz) Italian salad dressing mix (such as Good Seasons)

Rinse the mushrooms and drain well. Cut off any tough portions of the stems and cut the mushrooms in half to make bite-size pieces. If any mushrooms are very large, cut them in quarters. Place the mushrooms in a 2-quart storage bowl or zipper-top plastic bag.

Place the olive oil, vinegar and salad dressing mix in a small bowl with 3 tablespoons of water and whisk to combine. Pour the marinade over the mushrooms. Cover the bowl and zip seal the bag.

Refrigerate the mushrooms in the marinade for 8 hours or up to 2 days. If possible, stir the mushrooms or turn the bag once or twice while the mushrooms are marinating.

To serve, drain the mushrooms and place them in a small serving bowl. The marinated mushrooms can be refrigerated, drained and covered, for up to two days.
