CAJUN SPICED WALNUTS

1 egg white
1 tsp ground cayenne pepper and paprika
1 1/2 tsp mixed dried herbs and garlic salt
2 cups (1 lb) walnut halves

Preheat oven to 350. Coat a large, shallow baking pan with nonstick cooking spray.

In a large bowl, place egg white, cayenne, herbs, garlic salt and paprika. Beat with a whisk of fork until blended. Add walnuts; toss until evenly coated, then spread in prepared baking pan. Bake 16 to 18 minutes, stirring once after about 8 minutes, until nuts look dry and toasted. Remove from oven and cool completely. Store in airtight container.

Note: If you can, prepare nuts a day ahead, as flavors blend and mellow overnight.
