BUTTERFINGER BLIZZARD SANDWICH COOKIES

Box of Chewy Brownie Mix (roughly 20 oz)
8 oz tub of Cool Whip, thawed
2 eggs

Preheat oven to 350. Lightly grease cookie sheets.

Mix ingredients in a large bowl until combined. Chill for about an hour. Scoop dough by tablespoonfuls onto baking sheets, spacing a couple of inches apart. Bake for about 9 minutes, or until edges look done and centers are puffy. Let cool on baking sheets for a few minutes before removing with a spatula and placing on a cooling rack.

Filling:
1 stick (1/2 cup) butter, softened
1/2 cup peanut butter
1/2 teaspoon vanilla
1/3 cup heavy cream
3 cups powdered sugar
8 fun size (or about 2 regular size) Butterfinger candy bars, chopped finely

In the bowl of a mixer, beat butter, peanut butter, vanilla and cream until smooth. Slowly add powdered sugar and beat on low until just combined. Increase speed to high and beat for about 2 minutes. Fold in crushed candy bars.

Spread filling on the flat side of one cookie. Top with another cookie and gently press down to stick.
