CHEESY SMASHED NEW POTATOES

3 pounds new potatoes, washed and quartered
1 tablespoon salt
1/2 cup warm milk
1/4 cup butter, softened
1 (3-ounce) package cream cheese, softened
1 1/2 cups shredded Cheddar cheese
Salt to taste
Ground black pepper to taste
Place new potatoes and salt in a 4-quart saucepan with enough water to cover; bring to a boil over high heat on stovetop. Cover with lid and cook for 15 to 20 minutes until fork tender; drain well.
Mash potatoes with fork or potato masher. Add milk, butter, cream cheese, and Cheddar cheese, stirring to combine. Season with salt and pepper. Serve immediately. Yield: 6 - 8 servings
